Fuel Your Workouts with This Delicious Grilled Chicken and Quinoa Salad Recipe!
- 2 boneless, skinless chicken breasts
- 1 cup uncooked quinoa
- 2 cups water
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 tablespoon honey
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 cups mixed greens
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- Preheat a grill to medium-high heat.
- Season the chicken breasts with salt and pepper, and grill for 6-7 minutes per side or until cooked through.
- While the chicken is cooking, rinse the quinoa and place it in a saucepan with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until all the water is absorbed.
- In a small bowl, whisk together the olive oil, lemon juice, honey, garlic, salt, and pepper to make the dressing.
- In a large bowl, combine the cooked quinoa, mixed greens, avocado, cherry tomatoes, and red onion. Toss with the dressing.
- Slice the grilled chicken and serve it on top of the quinoa salad.
